Strawberry Chia Seed Pudding

Makes 4 servings
INGREDIENTS
2 cups milk of choice
2 cups strawberry greek yogurt (OR regular yogurt + a handful of strawberries to the blender when mixing ingredients)
1/2 cup chia seeds
4 scoops vanilla or strawberry protein powder
INSTRUCTIONS
Blend all ingredients until combined. Pour evenly onto 4 jars/containers and refrigerate overnight.
When ready to serve, top with sliced strawberries, bananas and/or berries. Enjoy!
Protein Rice Crispy Ice Cream Squares

makes 12 servings
INGREDIENTS
4 cups rice crispy cereal
4 scoops vanilla protein powder
1 tub coco or cool whip
6 tbsp powdered peanut butter (optional)
INSTRUCTIONS
- Stir together coco/cool whip, protein powder and powdered peanut butter until fully combined. You can use a hand mixer as well.
- Pour in crispy rice cereal and stir to fully combine.
- Add mixture to a parchment paper lined baking dish and pop in the freezer for 3-4 hours.
- Once frozen, cut into squares and keep in an airtight container in the freezer until ready to eat.
Gnocchi with Sausage & Broccolini in a Brown Butter Sage Sauce

makes 6 servings
INGREDIENTS
~about 5 cups gnocchi; I used the pumpkin gnocchi from Trader Joe’s
2 cups broccolini
1lb italian sausage
1/2 cup butter
handful of fresh sage leaves
salt & pepper
INSTRUCTIONS
- Toss broccolini in olive oil spray, salt & pepper. Cook in oven at 350 degrees for 10-12 minutes or until crispy.
- Cook sausage until fully browned/done. Strain and set aside.
- Cook gnocchi per package directions. Strain and set aside
- In the pan you used for the sausage, add butter and sage over medium heat, stirring to keep sauce from burning.
- Once butter is melted completely and starts to brown just a bit, toss in cooked gnocchi, sausage and broccolini. Stir to combine.
- Serve with parmesan cheese (optional)
- Enjoy!
Beef & Veggie Stir Fry

makes 4-6 servings
INGREDIENTS
1lb thinly sliced beef
5 cups mixed veggies/stir fry veggies of choice
1.5 cups Teriyaki sauce (I used the Soyaki Sauce from Trader Joe’s)
4 “blocks” or packs of ramen noodles
Handful of basil leaves
INTSRUCTIONS
- Add beef to a pan with 1-2 tbsp avocado oil, season with salt & pepper. Cook until brown/done.
- Add 1 cup teriyaki sauce, basil and mixed veggies to beef. Cook until veggies are tender and sauce cooks down a bit.
- While veggies/beef mixture is finishing up, boil ramen noodles per package directions.
- Combine all cooked ingredients in a bowl and add remaining 1/2 cup teriyaki sauce. Stir to combine.
