
Crockpot Chili
makes 6-8 servings
INGREDIENTS
- 2lbs ground beef
- 1 small yellpw onion
- 4 cups beef broth
- 28oz can diced tomatoes (I used fire roasted)
- 15oz can kidney beans, drained and rinsed
- 2 cups cubed sweet potatoes (optional)
- 1/4 cup tomato paste
- Salt, pepper, paprika and chili powder
INSTRUCTIONS
- Add 2 tbsp avocado oil to a pan. Add diced yellow onion and ground beef (seasoned with salt, pepper, paprika and chili powder – I did about 1tsp each), cooking through.
- In a crockpot, add diced tomatoes, kidney beans, diced sweet potatoes, beef broth and tomato paste. Add cooked ground beef once finished cooking. Add 1-2 tsp paprika and chili powder.
- Cover and cook on high for 4 hours.
- When ready to serve, top with shredded cheese and cilantro. Enjoy!
Chicken Nacho Night
makes 4-6 servings
INGREDIENTS
- 1lb chicken breast
- 1 pouch taco or fajita seasoning
- 1 yellow onion
- 2 bell peppers
- Tortilla chips (I like the Siete brand)
- Shredded cheese (about 1/4 cup per serving)
- optional toppings: cilantro, lettuce, lime, beans, etc.
INSTRUCTIONS
- Dice chicken into small 1 inch pieces and cook in a pan with 2tbsp avocado oil, salt and pepper. Add sliced onions and bell peppers. Once chicken is cooked, add taco/fajita seasoning and 1/4 cup water to pan. Cover and let simmer until sauce thickens/fully coats chicken + veggies.
- On a baking sheet with parchment paper, spread a thin layer of tortilla chips and then layer chicken, cheese & toppings of choice.
- Cook in oven at 350 degrees until cheese melts – roughly 10 minutes (but keep an eye on them!)
Lunches For the Week
- Protein Pizzas: protein pizza crust with pizza sauce, mozzarella cheese & pepperoni (can do any toppings of choice; you can also use Dave’s Killer Bagels as the crust for a high protein option)
- Chicken Wraps: 2 small tortilla wraps with 1 serving of chicken nuggets (divided), shredded lettuce, 1-2 tbsp shredded cheese and 1-2 tbsp dressing (BBQ + ranch or buffalo + ranch).
