
Here’s what I’m cooking for the family this week. This was also my first time using ChatGPT to plan out mean and I’m actually annoyed didn’t try this sooner!

Can you plan out 3-4 meal ideas for the week. Family friendly (for toddler and baby, too). Easy meals that take less than 30 minutes to prepare/cook. High in protein, easy to assemble. No seafood or pork. One pasta based dish (using chickpea noodles). Maybe a taco/nacho night. Let’s do the meals, quick recipes and shopping list.
THIS WEEK’S MENU
🌮 Meal 1: Sheet-Pan Chicken Nachos (Taco Night!)
How to make:
- Toss 1 lb cooked or rotisserie chicken with taco seasoning + splash of broth or salsa.
- Spread tortilla chips on a sheet pan, top with chicken + black beans + cheese.
- Bake 8 min @ 400°F.
- Top with Greek yogurt (instead of sour cream), avocado, diced tomatoes, and shredded lettuce.
For toddlers/baby:
- Serve deconstructed: beans, chicken, avocado, soft chips or mashed sweet potato.
🍝 Meal 2: Chickpea Pasta with Sausage & Veggies
How to make:
- Cook chickpea pasta.
- Sauté sliced chicken sausage + sundried tomatoes + spinach + olive oil + garlic.
- Add a splash of broth + a spoon of pesto or marinara.
- Toss pasta + top with parmesan.
For toddlers/baby:
- Cut sausage finely, mash veggies into sauce
🍗 Meal 3: Greek Chicken Rice Bowls
How to make:
- Cook 1 lb diced chicken in olive oil + lemon juice + garlic + oregano.
- Serve over rice or quinoa.
- Add cucumber, tomato, feta, and drizzle of Greek yogurt sauce (yogurt + lemon + dill).
For toddlers/baby:
- Serve chicken plain or with yogurt dip, diced cucumber + tomato pieces, rice separate.

I love this! Keep up the great work! I am six weeks post my liver transplant and need to follow a to a high protein diet. This is GREAT! I will slowly incorporate some exercise. Thank you for the inspiration.
