t’s Friday. Summer is here. It is 90+ degrees in Atlanta this week. To say I need a cocktail is a major understatement. To kick off the weekend, I thought I’d share one of my favorite light + summery cocktails with you guys because who can resist a good weekend libation? Whether you’re hosting your girls for a little spa night at home, whipping up party favors for a backyard bbq or just settling in for a little R+R at home like me, this Cool Cucumber cocktail is just what you need. Made with one of Pinnacle Vodka’s 40+ options (I opted for original!), not only is this a super easy recipe, but I like to think it’s pretty darn healthy too!
- Pinnacle Original Vodka
- Cucumber, Apple, Ginger juice (I made at home with my juicer but you can try any cucumber based juice from your favorite juicery!)
- Cucumbers for garnish
- Splash of Club Soda
- If you are making your own juice at home, combine two (2) apples, one (1) cucumber and a little ginger into your juicer and press. For something a little easier, head to your local organic grocer like Whole Foods, Trader Joes or the Farmers market and scoop up your favorite cucumber or greens based juice – just make sure the green juice has a few fruit ingredients for a slight touch of sweetness.
- Pour 1 to 2 shots of Pinnacle original flavored Vodka over ice and then top off with your juice.
- Add a splash of Club soda and a few slices of cucumber for garnish.
