

I don’t know what it is about summer but when it comes to this time of year, I literally crave salads. Give me all of the veggies – but served cold. Truth be told, I almost never order a salad when I go out to eat let alone make one for myself at home. I feel like I get hungry almost right away. If I’m going to eat healthy, I usually opt for a more robust meal of protein, lots of cooked veggies and some sort of yummy carb situation.
But come summer and all I want are salads. I’ve been whipping up a version of today’s simple veggie salad at least once a week for the past few weeks and don’t see it coming to an end anytime soon. Perfect when served solo or paired with your favorite grilled protein, this is going to be a hit for your next summer meal. Pro Tip: toss in some chickpea pasta and you’ve got the yummiest pasta salad.
INGREDIENTS
- 2 cucumbers
- 5 mini bell peppers
- 2 peaches
- 1 cup small tomatoes
- 1 bunch basil
- Olive oil
- Salt, pepper and crushed red pepper
DIRECTIONS
Chop and dice all veggies into bite size pieces. Add to bowl.
In a blender, add basil and 2 tbsp oilve oil. Blend until combined and basil is broken down.
Add pesto mix to veggies. Toss to coat. Add salt, pepper and crushed red pepper to taste. Enjoy!
