Here are three dinners we’ve had on rotation because I want to spend as little time as possible in the kitchen and my toddlers will actually eat them. High protein, low commitment = a busy mom win.
Baked Lemon Chicken + Green Beans + Potatoes

~47g protein per serving, makes 4 servings
INGREDIENTS
- 1 lb chicken drumsticks (or cut of choice — I prefer skin-on)
- 2 cups diced red potatoes
- 2 cups chopped green beans
- 3 lemons
- ½ cup olive oil
- 1 tbsp minced garlic
- Salt + pepper, to taste
- 2 tsp paprika
RECIPE
- Preheat oven to 425°F.
- Line a sheet pan with parchment paper. Add diced potatoes and green beans.
- In a bowl, combine olive oil, juice of 2 lemons, garlic, salt, pepper, and paprika.
- Toss chicken in the lemon oil mixture.
- Layer chicken over potatoes and green beans. Pour remaining sauce over everything.
- Bake for 40 minutes, or until chicken is cooked through.
- Optional but highly recommended: broil for 2–3 minutes at the end for extra crispy skin.
Easy Chicken Parmesan

~40g protein per serving, makes 4 servings
INGRDIENTS
- 16oz chickpea or lentil pasta (can also use regular pasta for slightly lower protein)
- 3 cooked breaded chicken breasts (I like the Just Bare brand) or you can make your own
- 1 cup marinara sauce (I like the Rao’s brand), 3/4 cup for mixing in + 1/4 cup to top dish
- 1/2 cup shredded mozzarella cheese
RECIPE
- Preheat oven to 375°F.
- Cook pasta according to package directions.
- In a baking dish, stir cooked pasta with ¾ cup marinara sauce.
- Top with cooked chicken, remaining ¼ cup marinara, and mozzarella cheese.
- Bake for 10–15 minutes, until cheese is melted and bubbly.
Taco Bowls

~30g protein per serving, makes 4 servings
INGREDIENTS
- 1lb ground beef
- salt & pepper
- 1 packet taco seasoning
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups white or brown rice, cooked
- 1/2 cup shredded cheese (Mexican blend or cheddar)
